When I was a little kid, my best friend and next door neighbor was a girl scout. Every year, she would knock on our door, and my mom would buy boxfuls of cookies. Our favorite? Samoas! Absolutely. 100%. For sure.

As I got older, I became more and more aware of how I didn’t feel so great after a box of these cookies. But, they taste so good. I was dying to find an alternative that was easy to make, and was a bit more reasonable when it came to nutrition.

And that is where this 5 ingredient samoa cookie recipe comes from. And they really do only take a handful of minutes to throw together.

Samoa Cookie Recipe Shopping List

24 dates
1 cup toasted coconut
1/2 cup chocolate chips (dark)
1 packet chocolate shakeology or 1/2 cup chocolate protein powder of your choice
1T coconut oil

How To Make This Samoa Cookie Recipe

This recipe comes together so quickly. You basically make the samoa topping, and then a chocolatey base and drizzle. Both steps are super easy.

First, throw your dates in a blender with the toasted coconuts. Blend them until they aren’t lumpy. It should be quite sticky and be easy to roll into balls, which is what you are going to do next.

Roll them into 12 balls, and place on a lined cookie sheet.

Then, take a spoon, press down in the center and make that cookie ball into the shape of a donut.

Toss it all in the freezer for 5 minutes while you do the next part.

Simply melt the chocolate chips, and coconut oil together. Microwave for 15 seconds at a time until it is nice a melted. If you’re adding the protein powder, mix this in.

Now, pull out your cookies, dip the bottoms in the chocolate sauce and then drizzle the rest of the chocolate over the top. Place back in the freezer for 5 minutes and they are ready to go!

Ingredients

  • 24 24 dates

  • 1 cup 1 toasted coconut flakes

  • 1/2 cup 1/2 chocolate chips

  • 1/2 cup 1/2 chocolate protein powder

  • 1 T 1 coconut oil

Directions

  • Add dates and toasted coconut flakes to food processor. Blend until they have a soft consistency.
  • Roll the date mixture into 12 balls and place on a lined cookie sheet. Use a spoon to flatten and create a little hole in the middle. Place in freezer while you move onto the next step.
  • Add chocolate chips and coconut oil to a microwave safe bowl. Microwave 15 seconds at a time until easy to stir and chocolate is melted. Mix in extra protein powder.
  • Take date rounds out of the freezer. Dip the bottom of each one into the chocolate mixture. After they have all been dipped, drizzle the remaining chocolate on top. Place in fridge until set. Usually about 15 minutes.
  • Store in airtight container in fridge or freezer.

  • If your dates a very dry to begin with, you can add a Tablespoon of water to the mixture to get it to all stay together. If you have fresh dates, you shouldn’t need to do this.
  • Makes 12 cookies.

  • women who ate dates were less likely to have their water break before labor began
  • they were more likely to go into labor on their own vs needing an induction
  • they ultimately used less pitocin to move their labor along
  • they had a shorter early phase of labor (8.5 hours vs 15 hours)

One study found that supplementing their diet with 3 g of protein powder, beginning at 29 weeks, for four weeks reduced blood pressure, improved fetal health and growth and beneficially prolonged pregnancy for women with pre-eclampsia.

From this study we can conclude protein powder can have a beneficial place filling gaps in a mother’s diet.
